The Apulian Peperati, called pupuret in our dialect, are linked to memories of my childhood. Back then, they weren’t ready and packaged in bakeries as they are today but were made especially during the Carnival period and baked in a wood oven. Today we can easily prepare them at home and bake them in an electric oven. The taste is not identical but just as satisfying. This traditional sweet has an intense aroma because it uses fragrant spices and is sweetened with honey. Truly exquisite and enjoyable to eat.

Ingredients
- 8 cups all-purpose flour
- 8.8 oz honey
- 8.8 oz sugar
- 5 fl oz cooked wine
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- 2 packets vanillin
- 2 oranges (use grated peel)
- 1 small glass extra virgin olive oil
- 5 fl oz apple juice
- 2 tablespoons unsweetened cocoa powder

Steps
Pour all the dry ingredients onto the work surface: sifted flour, sugar, cinnamon, cloves, vanillin, grated orange peel, cocoa. Mix and form a well by making a hole in the middle.
Pour the liquid ingredients into the center: oil, honey, cooked wine, apple juice. You can save and eat the apples separately.
Knead with your hands until you get a dough that’s consistent, fairly soft but not too much.
Divide the dough into pieces and stretch strips to form large beautiful rings as shown in the image.
Place on the baking plate positioned in the center three rings at a time spaced for about twenty minutes at 392 degrees Fahrenheit.
You will need to bake several times until all the rings are cooked.
Let the Apulian peperati cool well with their intoxicating aroma due in particular to cinnamon, cloves, and orange.
