Orange acquasale with bread is a typical poor Apulian recipe made with homemade bread: When the bread became stale, there was always a way to recover it, and if it was cold and you had an orange at home, you would cook this easy recipe.
I wanted to try making this at home on one of those cold evenings for dinner with my acquasale using burnt wheat flour bread which is special. You might ask what does it taste like? It’s similar to Apulian bread, but you notice a slightly different taste because you can feel that burnt flavor, although it’s really not intrusive because, as I said, it’s just barely noticeable. The orange slices on top then stood out, and I liked it a lot.

Put the water and salt in the pot and bring to a boil.
In the meantime, peel the two oranges and remove the pith, trying to eliminate the excess white part. Slice thinly.
Prepare the slices of bread on the plate (I recommend two slices per person) and arrange the orange slices on top, finely chopped parsley, and diced garlic.
Finally, pour the boiling water over the bread so it can soak well and drizzle with a bit of Apulian extra virgin olive oil.
This is the orange acquasale from Apulia that I was taught. Some prefer to prepare a good orange salad with all the ingredients and then pour the boiling water over it. In this case, the bread is dunked piece by piece. The result is the same. With burnt wheat flour bread, it’s special.
