Soft Clementine Cookies for Christmas Holidays without Lactose

We recently discovered lactose-free clementine cookies with my daughter. We committed to making them during the Christmas and New Year holidays as we had some time on our hands and wanted to prepare something nice and special to gift a friend for her birthday.

What can I say, we loved them. They have a really unique fragrance and taste. They are light and lactose-free, made with the juice of clementines.

Ingredients

  • 2 1/8 cups flour
  • 6 1/3 tbsp lactose-free butter
  • 1/2 cup sugar
  • 2 eggs
  • 3 fresh clementines
  • 2 tsp baking powder (A little over half a packet)
  • to taste powdered sugar (optional)

Steps

In a bowl, beat the softened butter (taken out of the fridge an hour before) with the sugar for a few minutes until it appears fluffy.

  • Add the egg and mix. Gradually incorporate the flour while continuing to mix with the whisks and slowly pour in the juice of three clementines.

  • Also add the grated zest of two clementines. To grate it more easily, I placed the clementines in the freezer for about fifteen minutes.

  • Transfer the obtained dough wrapped as a block in plastic wrap into the fridge to rest for about half an hour.

  • Sprinkle flour on the work surface and roll out the dough, which should not be very thin; I recommend about 1/4 inch. Shape the cookies with the beautiful Christmas or other cutters you prefer and place them spaced on the baking sheet lined with parchment paper.

  • Bake the lactose-free clementine cookies in the oven at 338°F for about ten minutes.

  • When the soft and fragrant cookies cool, dust them with powdered sugar using a sieve if you like, and enjoy them with a good cup of tea or coffee.

  • These delicious cookies are also a gift idea for friends during the holidays, which I believe they will surely appreciate.
