Pandoro truffles without mascarpone and cream with coffee and cereals are an idea to recycle leftovers. As is usual during this Christmas season, initially, we’re eager to eat pandoro, but then… we get tired of it, and if we don’t find an idea, it would remain there for who knows how long. In my house, cereals are never missing, and to make my truffles, I thought of using those delicious chocolate ones my daughter has for breakfast.

Ingredients

  • 3/4 cup pandoro
  • 1 3/4 oz corn flakes (chocolate or other breakfast cereals)
  • 1/2 cup coffee (Diluted or decaffeinated)

Steps

  • First, coarsely chop the cereals in a food processor and pour them into a bowl.

  • Dip the pandoro in coffee without sugar, diluted with water or decaffeinated, and place it in the food processor with some of the cereals. Blend for a few seconds and place the mixture in another bowl.

  • Take small amounts of the mixture and form the truffles. Roll the sweets in the other bowl with the chopped cereals so they stick evenly as if flouring.

  • Place the pandoro truffles without mascarpone or cream (I chose not to add more since pandoro contains a lot of butter) on a serving tray and serve with a good coffee to guests, also suitable for after lunch or dinner.

The pandoro pieces need to be quickly dipped in coffee to avoid absorbing too much, or the mixture won’t have the right consistency.

Finally, let them rest in the refrigerator for about half an hour to enjoy them at their best.
