Green Bean and Egg Salad without Tuna with Roasted Peppers

  • 4 eggs
  • 2 bell peppers

Steps

  • Trim the green beans by removing the tips and pulling the strings. Chop, wash, and boil in a pot when the water is boiling. Cook for about fifteen minutes. Drain and let cool.

  • Clean the peppers, cut them in half, and remove all the seeds. Slice into strips and cook in the air fryer for fifteen to twenty minutes. Open the fryer and stir occasionally. Let cool.

  • Cook the hard-boiled eggs in a small pot covered with water and boil for 8/10 minutes. Cool the eggs with cold water and remove the shell. Coarsely chop.

  • Combine the cooked ingredients in a bowl and season with salt, extra virgin olive oil, and finely chopped garlic. Mix well. Let it rest in the fridge for about twenty minutes.
