Deliciously tasty, with a gooey heart: the savory strudel with Speck Alto Adige PGI is one of those dishes that is easy to prepare but always impresses at the table. The buttery puff pastry shell encloses a tasty filling of cheese, champignon mushrooms, and, of course, many slices of Speck Alto Adige PGI.

Ingredients
- 1 lb champignon mushrooms
- 2 tablespoons vegetable oil
- 1 clove garlic
- to taste salt
- 2 cups cheese (such as Fontina)
- 1 sheet puff pastry (rectangular)
- 5 oz Speck Alto Adige PGI (sliced)
- 1 egg (for brushing)
- to taste poppy seeds
Steps
To prepare the savory strudel with Speck Alto Adige PGI and mushrooms, clean the champignon mushrooms well using a small knife and a brush, removing all the dirt, then slice them thinly.
Heat a pan with the oil and sauté the peeled and crushed garlic clove with the blade of a knife. After about a minute, add the mushrooms and sauté over high heat for 5-6 minutes, stirring occasionally, until the mushrooms have softened. Remove from heat and set aside to cool.
Preheat the oven to 392 degrees Fahrenheit (fan-assisted) and line a baking tray with parchment paper.
Cut the cheese into cubes and set aside.Unroll the puff pastry sheet and start filling it. First, create a layer of Speck Alto Adige PGI slices, slightly overlapping them and leaving about 1.5 inches along the edges. Then distribute half of the cheese cubes and the sautéed champignon mushrooms. Finish by spreading the remaining cheese over the mushrooms.
Fold the two short sides inward, covering a bit of the filling, then roll it all up from the long side to form the classic strudel. Transfer the strudel to the baking tray.
Prick the surface multiple times with a fork, brush the strudel with the beaten egg, and sprinkle with poppy seeds as desired.
Bake at 392 degrees Fahrenheit for about 30 minutes, or until golden brown.
Remove the savory strudel with Speck Alto Adige PGI and champignon mushrooms from the oven and serve sliced.
