Satay is an Indonesian dish, also popular in Thailand and Malaysia. It consists of skewers of meat, which can vary depending on the region or personal taste, marinated in a mix based on soy sauce, lime juice, and other spices/aromas. Today, I share the recipe for chicken satay with peanut sauce, which I recently enjoyed at a brewery in Germany… and fell in love with.
Satay is often served with boiled or steamed rice, as well as cooked and raw vegetables. I propose it on a tasty mixed salad, just as I enjoyed it in Germany.
Of course, for the marinade, you can adjust the quantities according to your taste. Add more or less chili, if you can’t find fresh ginger, replace it with dried ginger powder (in that case, reduce the quantities as it has a more intense flavor) or add lime juice to the cooked skewers for an extra touch of freshness.

Ingredients
- 1.3 lbs chicken breast (boneless)
- 4 tbsps soy sauce
- 3 tbsps lime juice
- 2 tsps honey
- to taste chili pepper
- 1 tsp ginger (grated)
- 2 cloves garlic
- 1 tsp sesame oil
- to taste vegetable oil (for cooking)
- 3.5 oz peanut butter
- 2 tbsps soy sauce
- 2 tbsps lime juice
- 1 tsp honey
- 1 clove garlic
- 1 tsp ginger (grated)
- to taste water
- to taste mixed salad or boiled rice to serve
Steps
To prepare the chicken satay, cut the chicken breast into cubes about 3/4 inch. Set aside.
In a bowl, mix the soy sauce, lime juice, honey, chili to taste, ginger, finely chopped garlic clove, and sesame oil. Then add the chicken pieces and mix well, so that every piece is covered with the marinade. Cover with contact wrap and place in the fridge for at least 1 hour, or even overnight if desired.
Meanwhile, soak the wooden skewers you will use to make the chicken satay in water, so they don’t burn during cooking. If you are using steel skewers, you can skip this step.
After the marinating time, thread the marinated chicken pieces onto the skewers and place them in a baking dish.
Once you have prepared all the skewers, heat a pan with a little oil and cook the skewers on both sides over high heat for 2-3 minutes per side. During cooking, baste them with the remaining marinade.
Remove the chicken satay from the pan and serve immediately accompanied with peanut sauce (for which the procedure is described below) and boiled rice or a nice mixed salad.
To prepare the peanut sauce, in a small bowl mix the peanut butter, soy sauce, lime juice, honey, finely chopped garlic, and grated ginger. Then add a little water at a time while stirring until the desired consistency is reached.
