Granola with South Tyrolean PGI Speck: a perfect preparation to enrich many dishes with a touch of flavor and crunch!

Oat flakes, various seeds, almonds, the ingredients are practically the same as for a classic sweet granola, but with the addition of South Tyrolean PGI Speck in cubes and a mix of tomato paste and agave syrup that makes everything spicy, with a harmonious combination of sweet and salty. One of those delicious recipes that become addictive!

Granola with South Tyrolean PGI Speck is indeed good almost anywhere, for example on sunny-side-up eggs, in vegetable soups, in salads, but also as a topping for hummus or various sauces!

Ingredients

  • 4.9 oz South Tyrolean PGI Speck (slices about 1/8 inch thick)
  • 2 1/4 cups oat flakes
  • 1/4 cup flax seeds
  • 2/3 cup almonds
  • 3 tbsp poppy seeds
  • 1/2 tsp salt
  • 1 tsp sweet paprika
  • 1/4 cup agave syrup
  • 1/4 cup tomato paste
  • 1/4 cup vegetable oil

Steps

  • To prepare the granola with South Tyrolean PGI Speck, preheat the oven to 340°F (fan) and line a baking sheet with parchment paper.
    Remove the rind from the South Tyrolean PGI Speck and cut the slices into small cubes. 
    Place the oat flakes, flax seeds, almonds, poppy seeds, salt, paprika, and the diced South Tyrolean PGI Speck in a bowl and mix.

  • In a small saucepan, pour the agave syrup, tomato paste, and vegetable oil. Heat while stirring until the mixture begins to simmer. Pour everything into the bowl with the dry ingredients and mix well to combine.
    Then spread the mixture onto the parchment-lined baking sheet, forming a compact rectangle about 1/2 inch thick.

  • Bake at 340°F for 10 minutes, then stir, reshape into a rectangle, and bake for another 10 minutes. Stir again, reshape into a rectangle, and bake for another 5-10 minutes, until the granola is golden.
    Remove from the oven and let cool completely on the sheet. Once cooled, transfer to an airtight container.
