Preparation of Baked Potato and Cheese Donuts
Start by peeling the potatoes, then wash and dry them, cut them into not-too-large pieces and place them in a pot with at least 8.5 cups of water and the coarse salt, set it on high heat and cook for 15 minutes from when it boils, then drain them and put them in a bowl.
With the help of a fork, mash the potatoes well in the bowl, add oil, salt, pepper and mix, also add the egg and cheese and blend them with the rest to obtain a very soft mixture.
Preheat the oven to 482°F, and in the meantime oil the donut mold using a piece of paper towel, then coat with breadcrumbs and shake off the excess.
Fill each donut mold with the potato mixture (with these amounts you’ll get 6 donuts) until it’s finished, gently press the surface of the donuts with the back of a spoon and sprinkle each donut with breadcrumbs.
The oven will now be at temperature, bake the potato and cheese donuts, cook for 20/25 minutes, then remove them from the oven, let them cool before removing them from the mold (this prevents them from breaking).
Once the donuts are cool, remove them from the mold and serve them, if you’d like to serve them hot, place them on a baking sheet (or inside a regular pan) with parchment paper and heat them in the warm oven for a few minutes, then enjoy and bon appétit!
