Baked potato and cheese donuts are perfect as an appetizer, very tasty and also very easy to make these savory donuts! Ingredients for Potato and Cheese Donuts
- 12 oz potatoes (weighed after peeling)
- 1 egg
- 4 tbsps Grana Padano grated cheese (or other aged cheese)
- 1 tbsp extra virgin olive oil
- 1 pinch fine salt
- as needed mixed peppercorns (to grind freshly)
- 8 1/2 cups water (to boil potatoes)
- 1 tsp coarse salt (to boil potatoes)
- as needed extra virgin olive oil (to oil the donut mold)
- as needed breadcrumbs (to "flour" the donut mold)

Preparation of Potato and Cheese Donuts
Start by peeling the potatoes, then wash and dry them, cut them into not too large pieces and put them in a pot with at least 8 1/2 cups of water and the coarse salt, place over high heat and cook for 15 minutes from the boil, then drain and put them in a bowl.
With the help of a fork, mash the potatoes well in the bowl, add oil, salt, pepper and mix, also add the egg and cheese and mix everything until you get a very soft mixture.
Heat the oven to 482°F, meanwhile oil the donut mold with the help of a piece of paper towel, then “flour” with breadcrumbs and shake off the excess.
Fill each donut mold with the potato mixture (with these quantities you will get 6 donuts) until finished, lightly press the surface of the donuts with the back of a spoon and sprinkle each donut with breadcrumbs.
The oven will now be at temperature, bake the potato and cheese donuts, cook for 20/25 minutes, then take them out, let them cool before removing them from the mold (this prevents them from breaking).
Once the donuts are cold, remove them from the mold and serve them, if you want to serve them hot, just place them on a baking sheet (or inside a regular pan) with parchment paper and bake them a few minutes in the hot oven, then enjoy them and bon appétit!
