Acquaviva Onions with Herbs

If you are looking for an aromatic side dish, without much fuss, Acquaviva onions with herbs are just the thing for you! Their flat shape makes them perfect for baking and thanks to their sweeter taste compared to other onions, they are appreciated by everyone.

To prepare this tasty side dish, besides Acquaviva onions, you will only need a bit of butter and some aromatic herbs, maybe even taken from the garden. I used sage, thyme, and rosemary, but you can also vary of course, for example, oregano and basil are also great!

If you are lactose intolerant, you can replace the butter with good extra virgin olive oil.

Ingredients

  • 2 Acquaviva onions
  • 2 leaves sage
  • 3 sprigs thyme
  • 1 sprig rosemary
  • to taste salt
  • 1.5 oz butter (soft)
  • to taste pepper

Steps

  • To prepare Acquaviva onions with herbs, preheat the oven to 392 degrees Fahrenheit (fan) and prepare a large baking dish.

  • Peel the onions and cut them in half lengthwise. Place them in front of you with the inside facing up and score the surface into wedges, taking care to only score the surface and not cut through the onion. Place the onions in the baking dish and bake at 392 degrees Fahrenheit for 20 minutes.

    Meanwhile, wash and dry the sage, thyme, and rosemary and chop them not too finely. Put the chopped herbs in a small bowl, add the soft butter and a pinch of salt, and mix. Place in the fridge.

  • After the first 20 minutes of cooking, remove the onions from the oven and place a quarter of the herb butter in the center of each onion. Salt the surface and bake for another 15 minutes. Then set the oven to grill mode, place the onions on the top rack, and brown for about 5 minutes.

    Remove from the oven and enjoy your Acquaviva onions with herbs hot or even cold.
