Cauliflower Hummus with Caramelized Apples

The classic hummus with chickpeas is known to many, but have you ever tried cauliflower hummus with caramelized apples? It is creamy, tasty, and flavorful, while the caramelized apples and scallion add a crunchy touch and an interesting contrast between sweet and savory.

To prepare it, I used the cauliflower from Val Venosta, available from early June to late October. I roasted it in the oven to enhance its flavor and blended it with extra virgin olive oil, lemon juice, tahini, and spices. Separately, I prepared the caramelized apples with Golden Delicious apples from Val Venosta, available all year round. Finally, I topped the soft and creamy hummus with the caramelized apples, scallion, and a few strawberries.

Cauliflower hummus is excellent enjoyed with sticks of raw vegetables or even breadsticks or crackers.

Ingredients

  • 1 cauliflower (Val Venosta – approx. 750 g)
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon smoked paprika
  • 1/2 lemon (juice)
  • 1 clove garlic
  • 2 pinches ground cumin
  • 70 g tahini
  • to taste salt
  • to taste pepper
  • to taste chili pepper
  • 1 Golden Delicious apple (Val Venosta)
  • 1 tablespoon extra virgin olive oil
  • 20 g sugar
  • 1 scallion
  • 2 strawberries (Val Venosta)
  • to taste red currants (Val Venosta)

Steps

  • To prepare the cauliflower hummus with caramelized apples, preheat the oven to 392°F (fan) and line a baking tray with parchment paper.
    Remove the cauliflower leaves, take the florets with the help of a knife, and divide the large ones into 2 or 3 pieces to get many florets of the same size. Rinse them under water and distribute them on the baking tray. Drizzle with extra virgin olive oil, mix, and bake at 392°F for about 20 minutes, until they have softened and taken on some color. Optionally mix halfway through.
    When the cauliflower florets are ready, transfer them to the blender (saving 5-6 for decoration) and add the smoked paprika, lemon juice, garlic clove, ground cumin, tahini, as well as salt, pepper, and chili pepper to taste. Turn on the blender and blend everything until you get a creamy and homogeneous mixture. Optionally adjust the spices. If it’s too thick for your taste, you can add a little water and blend again.
    Spread the cauliflower hummus on a plate.

  • Wash and peel the Golden Delicious apple, remove the core, and cut it into small cubes. Heat a pan with extra virgin olive oil and sauté the apple cubes for a couple of minutes, stirring. Add the sugar and caramelize by stirring. Remove from heat and set aside.
    Wash the green part of the scallion and slice it finely. Wash and clean the strawberries and cut them into cubes. Wash and stem the red currants.

  • Garnish the hummus with caramelized apples, scallion, strawberries, red currants, the reserved cauliflower florets, and a drizzle of extra virgin olive oil, then serve, or refrigerate until ready to serve.
