A delicious summer cold dish: barley salad with South Tyrol PGI Speck! Barley salad is an excellent alternative to the classic rice salad. I made a tasty Mediterranean version, with the addition of South Tyrol PGI Speck cut into matchsticks, essentially a Mediterranean version with a touch of South Tyrol.

Ingredients
- 9.9 oz pearl barley
- 3.5 oz sun-dried tomatoes in oil (drained)
- 2.5 oz arugula
- 7.1 oz cherry tomatoes
- 4.2 oz South Tyrol PGI Speck (sliced about 1/8 inch thick)
- 5.3 oz cherry mozzarella balls (drained)
- 3.2 oz Taggiasca olives (drained)
- 10 leaves basil
- to taste salt
- to taste pepper
- to taste extra virgin olive oil
- to taste South Tyrol PGI Speck (thinly sliced)
Steps
To prepare the barley salad with South Tyrol PGI Speck, rinse the pearl barley under water, then put it in a pot with plenty of cold water and bring to a boil. Boil for about 25 minutes, or according to the package instructions. Salt only towards the end of cooking. Drain, put in a bowl, add a drizzle of extra virgin olive oil, mix, and let cool.
In the meantime, prepare the dressing. Cut the sun-dried tomatoes into strips and set aside. Wash the arugula and cherry tomatoes. Roughly chop the arugula and halve the cherry tomatoes.
Remove the rind from the South Tyrol PGI Speck and cut it into matchsticks.When the barley has cooled, add the sun-dried tomatoes, arugula, cherry tomatoes, South Tyrol PGI Speck, mozzarella balls, Taggiasca olives, and basil leaves. Salt and pepper to taste, add a drizzle of extra virgin olive oil, and mix well to combine all the ingredients.
Place in the fridge for about 30 minutes to allow the flavors to meld. Serve your barley salad with South Tyrol PGI Speck accompanied by a few slices of South Tyrol PGI Speck.
Tip
If you prepare the barley salad the day before, or in advance, take it out of the fridge about 15 minutes before serving.
