A deep dark red color and a unique taste. Pears in red wine on mascarpone cream, besides being spectacular, are also delicious and irresistible. Preparing them is very easy, just peel the pears, cut them into wedges, and cook them in a mix of wine, water, and spices. The only thing is that after cooking, you need to have a bit of patience to let the pears cool slowly in their liquid. Only this way will they obtain this intense and inviting color. But just plan ahead. In fact, the advantage is that they can be prepared in advance, making them ideal to serve even when you have guests.

Ingredients
- 4 Kaiser pears
- 1 2/3 cups red wine
- 3/4 cup water
- 1/4 cup sugar
- 2 star anise
- 2 cinnamon sticks
- 5 cloves
- 2 slices lemon peel
- 5.6 oz mascarpone
- 1/3 cup heavy cream
- 1 tbsp vanilla sugar
- 1/2 tsp cinnamon
- 1 tsp lemon zest (grated)
- 2 tbsp sliced almonds (toasted)
Steps
To prepare the pears in red wine on mascarpone cream, wash and peel the pears, cut each into 4 wedges and remove the core.
Place the pear wedges in a pot together with wine, water, sugar, star anise, cinnamon, cloves, and lemon peel. Mix well.
Bring to a boil, stirring occasionally, then let it simmer gently, covered, for about 20 minutes, or until the pears are cooked but still firm.
Remove from heat and let the pears cool in their liquid for at least 5 hours, ideally overnight. This way, they will achieve their nice dark red color.
Once cooled in their liquid, remove the pears and set them aside. Bring the liquid back to a boil and reduce until about half, obtaining a thick and aromatic syrup.
To prepare the mascarpone cream, place the mascarpone in a bowl along with the heavy cream, vanilla sugar, and cinnamon. Work it with electric beaters until a smooth cream is obtained.
To serve, spread some mascarpone cream on a plate, place four wedges of red wine pears, drizzle with wine syrup, sprinkle with toasted sliced almonds, and enjoy.
