Mojito with Lemon and Currants

Ah, on warm summer evenings, a mojito is a must-have. Yes, I know this Cuban cocktail is traditionally made with lime, but since my lemon tree in the garden is incredibly generous at the moment, and the currants are also thriving, I thought of using these two fresh and aromatic fruits to make a nice mojito. What else do you need besides lemon and currants? Obviously, brown sugar, mint, sparkling water, and white rum. As for the latter ingredient, try not to be as clumsy as me, who dropped the bottle on the ground. Darn. Fortunately, it was almost empty, and before it shattered on the ground, I managed to make these two mojitos.

In any case, if you want to savor this alcoholic cocktail in its classic variant, replace the lemon with lime and omit the currants.

If you like experiments, substitute the currants with other fruits of your choice, such as pineapple, peaches, or strawberries, or even passion fruit (you can find the recipe for this variant also in my cookbook “Global Cooking” – which has 5 stars on Amazon, just saying ;))

Obviously, being an alcoholic cocktail, the mojito should be consumed in moderation, remember.

Ingredients

  • 1 lemon (unwaxed)
  • 1 tablespoon brown sugar
  • 10 leaves mint
  • 2.4 oz white rum
  • 3 clusters currants
  • 3.4 oz sparkling water (cold)
  • as needed currants (for garnish)
  • as needed ice cubes
  • 1 straw

Steps

  • To prepare the mojito with lemon and currants, wash the lemon and cut it into slices or wedges, place in the glass. Add the sugar and crush with the pestle so that the lemon releases its juice in which the sugar will dissolve. When the sugar has dissolved (but it’s okay if there are some grains left, which give a crunchy effect when drinking), add the mint leaves and rum. With the help of the pestle, run the mint leaves along the sides of the glass so they release their essential oils.

  • Wash the currants, remove them from the stem by running a fork over them, and add to the mojito.
    Finally, add ice cubes to taste and cold sparkling water. Give one last stir and serve your lemon mojito.
