Hummus with miso cabbage is a light and delicious dish. The contrast between the cold hummus, or at room temperature, and the freshly baked cabbage makes it even more appetizing.

Preparing it is very easy, you just need to cut the cabbage into wedges and brush it with a mixture of melted butter and miso. While it cooks in the oven, prepare the hummus by simply putting the ingredients in the blender and blending everything until a creamy texture is achieved. Easy, right?!

Ingredients

  • 1 pointed cabbage
  • 2 tbsp butter
  • 1 tbsp agave syrup
  • 1 tbsp miso
  • to taste sliced almonds (toasted)
  • to taste pepper
  • to taste mint (optional)
  • 8.8 oz canned chickpeas (drained)
  • 2 tbsp lemon juice
  • 1/2 clove garlic
  • 1 tbsp extra virgin olive oil
  • 2 tbsp tahini
  • 1/2 tsp salt
  • 2 pinches cumin
  • 5 tbsp water (cold from the fridge)

Steps

  • To prepare the miso cabbage, preheat the oven to 374°F (fan).
    Cut the cabbage into four wedges, wash them and let them drain.

    In a saucepan, melt the butter with the miso and agave syrup. The mixture should just be warmed to blend better, don’t let it boil.

    Place the cabbage wedges on a baking sheet lined with parchment paper and brush thoroughly with the miso butter, trying to get it in between the leaves.
    Bake at 374°F for 25-30 minutes, turning the wedges occasionally to ensure even cooking.

  • To prepare the chickpea hummus, put the drained chickpeas, minced garlic, lemon juice, extra virgin olive oil, tahini, salt, cumin, and three tablespoons of cold water into the blender. Blend everything until a smooth mixture is achieved. Add more water as desired for consistency, or even more lemon juice or cumin to taste. After each addition, blend again until you obtain a smooth and creamy hummus.

  • Spread the hummus on a serving plate and place the hot miso cabbage wedges on top. Finish by sprinkling everything with toasted sliced almonds and garnish with a few mint leaves if desired.
