Stewed potatoes and sausage, a comfort food from my childhood. My mom often made it when the temperatures started to drop and it got dark early. A classic dish to enjoy piping hot, wrapping you up from the first spoonful and tasting like home. That’s how it is for me.
The ingredients are very simple: potatoes, sausage, onion, water, tomato paste, and stock cube. In this case, I used the new Bauer meat cream stock, available in a handy tube to keep in the fridge, always ready to use. It contains over 60% selected vegetables, beef extract, Italian extra virgin olive oil, and a pinch of salt.
Now that the cold season has arrived, this recipe will be a staple in our menu.

Ingredients
- 1/2 onion
- 2 cloves garlic
- 10.6 oz sausage
- 14.1 oz potatoes
- 4 tablespoons vegetable oil
- 2 tablespoons tomato paste
- 1 oz flour
- 1.4 fl oz white wine
- 3 cups water
- 1 tablespoon meat cream stock (Bauer broths and seasonings)
- 2 leaves bay leaf
- to taste salt
- to taste pepper
Steps
To prepare the stewed potatoes and sausage, peel the onion and chop it finely. Peel the garlic cloves and slice them, set both aside.
Wash and peel the potatoes and cut them into cubes about 3/4 x 3/4 inch. Set aside.
Remove the casing from the sausages and crumble them with your hands. Set aside.
Heat a pot with the oil and add onion and garlic to sauté for a few minutes, without letting them color and stirring often. Add the crumbled sausage and sauté for a few minutes. Then add the potato cubes and sauté everything together for a few minutes. Add the tomato paste and stir. Then add the flour and stir for a minute over high heat. Deglaze with the white wine and let it evaporate.
Pour in the water while stirring, then add the Bauer meat cream stock and the bay leaves, if you have decided to add them. Pepper and let everything cook, covered, stirring occasionally, for about 15 minutes, or until the potatoes are cooked. According to your taste, you can add more Bauer meat cream stock.
Enjoy your dish of stewed potatoes and sausage nice and hot.
Tip
If you prefer a more liquid consistency, simply add more water.
