Soft Flan with Plums

And even this year, we are almost at the end with plums alas… but before their season was over, I wanted to make this soft flan, which I prepare every year and published on the blog for the first time back in 2017. It was definitely time to give it a new look and take some new photos.

Even though it’s a dessert, we also eat it as a real meal.

Of course, it can also be made with other types of fruit, such as peaches, apricots, apples, or pears.

Soft Flan with Plums

Ingredients

  • 2 cups milk
  • 1/2 teaspoon salt
  • 3/4 cup semolina
  • 6 tablespoons butter
  • 1/2 cup sugar
  • 1 tablespoon vanilla sugar
  • 4 eggs
  • 3/4 cup sour cream
  • 15 plums
  • 2 tablespoons sugar
  • 1/2 teaspoon ground cinnamon

Steps

  • To prepare the soft flan with plums, bring the milk to a boil with a pinch of salt. When it boils, sprinkle in the semolina, stirring with a whisk. Let it boil for a few seconds and remove from heat.
    Preheat the oven to 320 degrees F (fan-forced). Grease a large baking dish with a little butter.

  • Put the butter in a bowl and beat it with an electric mixer along with the granulated sugar and vanilla sugar until fluffy. Separate the egg yolks from the whites and set aside the whites.
    Add the yolks to the butter and sugar mixture, one at a time, adding the next only when the previous one has been absorbed.

    Add the semolina mixture to the butter mixture by spoonfuls, continuing to mix with the mixer. Then add the sour cream. Finally, whisk the egg whites until stiff and fold them in gently with a spatula, from bottom to top.

  • Pour the mixture into the buttered baking dish.

    Wash and dry the plums, cut them in half and pit them. Place the plums over the entire surface of the flan, with the cut side facing up.
    Bake at 320 degrees F for 45-50 minutes.
    Remove the soft flan with plums from the oven and sprinkle with a mix of sugar and ground cinnamon. Serve hot!
