A homemade rub for marinating meat has the advantage of being customizable to your taste. Preparing it is obviously very easy, just mix various spices and store it in a glass jar, to always have it on hand.
Different meats require different spices and thus different rubs. This rub, for example, is very suitable for seasoning red meats. I prepared it with a base of paprika, both sweet and hot, for its delicate aroma, but especially for its color. A few teaspoons of brown sugar, not so much, or rather, not only for its sweetness, but to achieve a caramelized effect that will help make the surface crispy. I then added garlic and onion powder, as well as dried rosemary and thyme, to give a Mediterranean touch. I didn’t add salt because I used Bauer instant beef broth, which, in addition to salt, also contains other dehydrated vegetables, such as potato, onion, carrot, parsley, garlic, and celery.

- 2 teaspoons sweet paprika
- 1 teaspoon hot paprika
- 3 teaspoons onion powder
- 1 teaspoon garlic powder
- 2 teaspoons pepper (ground)
- 3 teaspoons brown sugar
- 6 teaspoons instant beef broth (Bauer)

Steps
To prepare the rub for marinating meat, put the sweet paprika, hot paprika, onion, and garlic powder into a small bowl and mix. Add the ground pepper, sugar, and instant broth, dried rosemary, and thyme and mix everything well again. Transfer your rub into an airtight glass jar.
To marinate the meat, place it on a plate or tray and sprinkle it with the rub as desired, massaging it lightly. Then wrap the meat with plastic wrap and let it marinate for at least 3 hours, or even overnight if desired. Proceed with grilling, pan-frying, or as indicated in your recipe.
