Salad with Dried Figs and Apples

The salad with dried figs and apples is a winter salad rich in taste and textures. Great as a side dish or a light meal, especially after holiday feasts. In addition to arugula and lettuce, we find dried figs, apples, and also sunflower seeds, to bring a colorful and nutritious dish to the table. If desired, you can also add feta cheese cubes or Parmesan shavings for an extra touch of flavor and texture. As for the lettuce, choose the one you like best; I love curly lettuce in winter. This salad is also great with walnuts or toasted hazelnuts instead of sunflower seeds.

Ingredients

  • 5 cups curly lettuce
  • 2 cups arugula
  • 6 dried figs
  • 1 tbsp sunflower seeds
  • 1 apple
  • 1 tbsp mustard
  • 1 tsp honey
  • 4 tbsps extra virgin olive oil
  • 3 tbsps apple cider vinegar
  • to taste salt
  • to taste pepper

Steps

  • To prepare the salad with dried figs and apples, wash and dry the lettuce and arugula, cut both as desired, and place them in a bowl. Cut the figs into strips or pieces and add to the salad along with the sunflower seeds. Wash and dry the apple, remove the core, and cut it into sticks. Add to the salad in the bowl.

  • Separately, in a small bowl, mix the mustard with the honey, extra virgin olive oil, apple cider vinegar, as well as salt and pepper to taste.

    Dress your salad with dried figs with the mustard-based sauce, mix, and serve.
