Granola Bars with Almonds and Chocolate

The granola bars with almonds and chocolate are perfect as a snack or to recharge your energy during the day. They are also great to bring to school for recess, my girls love them. You really need a few genuine ingredients to make these bars, like almonds, honey, sesame seeds, and raisins. If you want, you can also prepare a double batch, so you’ll always have a supply in the fridge, where they keep well for 7-10 days.

For variety, you can also use hazelnuts or walnuts instead of almonds, or just replace a portion. As for the raisins, you can also substitute them with dried apricots cut into cubes or dried cherries.

Ingredients

  • 10.5 oz almonds
  • 1/2 cup honey
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 2 tsp vegetable oil
  • 1/4 cup sesame seeds
  • 2 oz raisins
  • 2.5 oz dark chocolate chips

Steps

  • To prepare the granola bars with almonds and chocolate, preheat the oven to 350°F (static) and line a baking dish (approx. 8 x 10 inches) with parchment paper.

  • Put 1.5 oz of almonds in the mixer and chop them finely, but not into flour. Roughly chop the remaining almonds.

    Place the honey in a bowl and slightly heat it to make it more liquid. Add the vanilla extract, salt, and vegetable oil and mix.

    Then add all the almonds, sesame seeds, raisins, and chocolate chips. Mix everything very well and transfer to the lined baking dish with parchment paper.

    Spread the mixture across the bottom of the dish, pressing firmly so that it’s compact.

  • Bake at 350°F for 20-25 minutes. Remove from the oven and let cool first at room temperature and then for at least an hour in the fridge, this will make it easier to cut the bars.

    Once cooled, cut everything with a sharp knife to get approx. 14 granola bars. Store your granola bars in the fridge, separating the layers with parchment paper to prevent them from sticking together.
