Spaghetti with carrot pesto is a simple and nutritious vegetarian main course, also suitable for kids. I spiced the pesto with turmeric powder and rosemary, which are two ingredients that harmonize very well with carrot, furthermore, turmeric enhances the color even more.
As for the texture of the pesto, you can prepare it according to your taste. If you like small pieces, chop it less in the mixer; if you prefer it creamier, chop it longer.
Carrots are rich in lutein and beta carotene, two important elements for eye health, which also have antioxidant properties. They are not lacking in vitamins, including vitamin A, C, and B group vitamins, and raw carrots are rich in fiber.

Ingredients
- 12 oz spaghetti (or other pasta of choice)
- 7 oz carrots
- 1/4 cup almonds
- 1 clove garlic
- 1/3 cup Parmesan cheese
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon rosemary powder (or fresh rosemary)
- to taste salt
- to taste pepper
- 3/4 cup extra virgin olive oil (indicative quantity)
Steps
To prepare the spaghetti with carrot pesto, bring plenty of water to a boil in a large pot, add salt, and throw in the pasta.
In the meantime, prepare the pesto. Wash and peel the carrots, cut them into pieces, and place them in the mixer. Add the almonds, peeled garlic clove, Parmesan cheese, turmeric powder, rosemary powder, as well as salt and pepper to taste.
Pulse the mixer and chop everything coarsely. Then add part of the extra virgin olive oil and continue to chop with the mixer. Add more extra virgin olive oil and blend everything with the mixer until you achieve the desired consistency.
Drain the spaghetti al dente, saving some of the cooking water. Put the spaghetti back in the pot, add the carrot pesto, and stir. Add a little cooking water and mix everything well.
Serve your spaghetti with carrot pesto immediately, garnished with a few sprigs of chopped carrot.
