Puff Pastry Wreath with Radicchio

Ingredients

  • 14 oz radicchio
  • 1 oz onion
  • 3 tbsp vegetable oil
  • to taste salt
  • to taste pepper
  • 6 oz fresh spreadable cheese
  • 1 roll puff pastry (round)
  • 5 oz cooked ham
  • 1 egg yolk
  • 1 tbsp milk
  • to taste black sesame seeds

Steps

  • To prepare the puff pastry wreath with radicchio, wash the radicchio well, chop it coarsely, and set aside.

    Finely chop the onion. Heat a pan with the oil and sauté the onion for about a minute. Add the chopped radicchio and let it wilt, stirring occasionally, it will take a few minutes.

    Remove from heat, add the fresh spreadable cheese, and stir to melt. Set aside to cool slightly.

  • In the meantime, preheat the oven to 390 degrees (convection).

    Gently unroll the puff pastry and leave it on its baking paper. Take a small bowl (about 5 inches in diameter) and place it upside down in the center of the pastry. Press lightly so that the edge mark remains, but do not cut the pastry.

    Place the slices of ham on the pastry around the bowl, leaving about 1 inch free along the outer edge.

    Then spread the radicchio and spreadable cheese mixture over the ham.

    Fold the outer edge of the pastry upwards to create a raised border, to prevent the filling from coming out during baking. Make small pleats along the edge every 2 inches or so and pinch lightly so it stays in place.

    Then remove the bowl from the center and cut the part of the pastry into 8 wedges. Starting from the tip of each wedge, fold it outwards and pinch the tip with the pastry edge to secure it.

  • Mix the egg yolk with the milk and brush all the pastry parts with it. Sprinkle with black sesame seeds as desired.

    Bake the puff pastry wreath with radicchio at 375 degrees for 20-25 minutes, until golden brown.

    Remove from the oven and enjoy hot or warm.
