Nasturtium butter is great on slices of bread, but it can also be used to flavor a nice grilled beef fillet, for example. In that case, put a small piece on the hot fillet, and as it melts, it will infuse it with an unmistakable aroma.
Nasturtium has a slightly pungent taste of its own, but if you like spiciness, you can also add a bit of chili pepper to further flavor the butter.
Prepare it with freshly picked leaves and flowers, as they tend to wilt quickly.

Ingredients
- 4.4 oz butter (soft)
- 1 clove garlic
- 1 tsp mustard
- 10 leaves nasturtium (medium)
- 5 nasturtium flowers
- to taste salt
- to taste pepper
Steps
To prepare nasturtium butter, wash and dry the nasturtium leaves and flowers and chop them finely with a knife. Peel and finely chop the garlic as well.
Place the soft butter in a deep dish and add the mustard, chopped nasturtium leaves and flowers, garlic, as well as salt and pepper to taste. Mix everything well so that all the ingredients blend together.
Once everything is well mixed, transfer the mixture onto a sheet of fridge paper or plastic wrap, form a block and wrap the nasturtium butter inside. Seal well and place in the fridge for 30 minutes before serving, so it sets a bit but is still easily spreadable. If you prepare this flavored butter the day before, remember to take it out of the fridge about 15 minutes before serving to make it more spreadable.
