Shrimp in Glass with Kiwi and Pomegranate

The shrimp in glass with kiwi and pomegranate is a fresh, colorful, and elegant appetizer, perfect for parties, BUFFETS, and all those occasions when you want to serve something light yet impressive. Served in a glass, they are easy to prepare and very scenic, perfect even to prepare in advance and easy to enjoy.
If you want to make them even richer, and this is an idea that just crossed my mind, you can also add a few chunks of seared salmon, which pairs wonderfully with the flavor of the SHRIMP as well as the refreshing taste of the KIWI and the slightly acidic note of the pomegranate.

Ingredients

  • 12 oz shrimp (prawns)
  • 2 kiwi
  • 1 pomegranate
  • 1 branch parsley (finely chopped)
  • to taste salt
  • to taste pepper
  • 1 spray lemon juice
  • 1 spray extra virgin olive oil (not fruity but light)

Steps

  • Clean the shrimp by removing the shell and intestinal vein, then rinse them quickly under cold water and dry them well with paper towels. Bring a saucepan with lightly salted water to a boil, immerse the shrimp, and boil them for 1-2 minutes, just until they turn pink.

    Drain them and let them cool completely.

  • Peel the kiwis (yellow or green as you prefer) and cut them into small wedges.
    Deseed the pomegranate (using gloves is much better) to obtain the seeds or arils. Finely chop the branch of fresh parsley.

  • Combine the cold shrimp, kiwis, pomegranate arils, and parsley in a bowl. Season with a pinch of salt, a grind of pepper, a light splash of lemon juice, and a drizzle of extra virgin olive oil. Gently mix to combine flavors and aromas without breaking the fruit.

  • Distribute the mixture in the glass cups and serve immediately, or keep covered in the fridge until ready to serve.

  • This appetizer in a glass is delightful, can be made in advance, and is super quick!
