Steps for Homemade Oven-Baked Cordon Bleu
To make the cordon bleu, place the chicken breast slices (ask your trusted butcher to cut them not too thin) on a work surface or cutting board.
Take the slices of cooked ham, place the rectangular slices of provolone, slightly smaller than the width of the chicken breast slices, then roll the cooked ham.
Place the rectangle of cooked ham and provolone on each chicken breast slice and fold over, pressing the edges well.
Take three bowls: pour the breadcrumbs into the first, the flour into the second, and the beaten eggs with a pinch of salt into the last. Dredge the cordon bleu in the flour, then dip them one at a time into the beaten egg, and finally into the breadcrumbs, making sure to distribute it evenly.
Place the cordon bleu in a lightly oiled baking dish and bake in a preheated static oven at 375°F for 20 minutes or until golden. Halfway through cooking, turn them gently.
Your homemade oven-baked cordon bleu is ready to be served, make sure they are piping hot.
