You really only need a few ingredients to prepare them: flour, eggs, and very fresh anchovies. - 1.3 lbs anchovies (fresh)

Steps for Fried Anchovies
As a first step to prepare this recipe, take care of cleaning the anchovies: remove the head, open them like a book, gently remove the bone, and rinse them thoroughly.
Once cleaning is complete, place a pan with plenty of oil on the stove and use a kitchen thermometer to check the temperature occasionally: it must reach 356°F for excellent frying.
In the meantime, while the oil is heating, pour the flour into a bowl and, in another, crack the two eggs, add a couple of pinches of salt, and beat them. Dip each anchovy first in the flour and then in the eggs.
When the oil has reached the right temperature, start frying the anchovies, cooking each side for a couple of minutes until golden. Drain the anchovies on a dish lined with paper towels and lightly salt.
Your fried anchovies are ready to be served.
