Ingredients for Christmas Cakes
- 2 eggs
- 1/2 cup sugar
- 3 1/2 tbsp butter
- 1 orange (untreated)
- 1 1/3 cup flour
- 2/3 cup candied fruit
- 1/2 cup raisins
- 1/2 packet baking powder (8 grams)
- 1/3 cup sliced almonds
- 2 tbsp sugar crystals

How to Make Panettone Muffins
First, soften the raisins in a bowl with hot water. Beat the eggs with the sugar using an electric mixer for 5-6 minutes until you have a light and frothy mixture
Add the melted butter, the juice, and the zest of the orange. Mix. Continue with the sifted flour and baking powder. Mix. Finally, add the chopped candied fruit and drained raisins. Mix with a spatula to incorporate them into the batter.
Pour the batter into silicone muffin cups, filling them 2/3 full. I got 10. Decorate them on the surface with sugar crystals and sliced almonds.
Bake the Muffins with raisins in a preheated static oven at 350°F for 22-24 minutes. Always do the “toothpick test” to check the internal cooking. Let them cool and decorate them as desired with icing sugar
