The baked potatoes and mussels in a baking dish are among my favorite recipes. Recently made and shared with French friends in the forest for a summer day to enjoy outdoors.
They were very much appreciated. Mussels are seafood mollusks that abound in our Adriatic Sea, especially in spring/summer.

Ingredients
- 4.4 lbs potatoes
- 4.4 lbs mussels (weighed with the shell)
- as needed tomato sauce
- 5 cherry tomatoes
- 1 clove garlic
- as needed oregano
- as needed parsley (fresh)
- as needed pepper
- as needed breadcrumbs

Steps
Frozen ready mussels HERE on amazon

In a pan with a little water on the heat, add the cleaned mussels and wait until they open.
Save the water left in the pan at the end of cooking enriched with the liquid released from the opened mussels, and separate all the fruit retrieved inside the mussels.
Peel the potatoes, wash them, and slice them.
In a baking dish, alternate layers of potatoes seasoning with parsley, garlic, pepper, oregano, pepper, mussel fruits, spoonfuls of sauce, chopped cherry tomatoes, and extra virgin olive oil.
Finally, add the water from the pan and a sprinkle of breadcrumbs on top: Bake for about forty-five minutes in the oven set at 392 degrees Fahrenheit.
Turn on the grill towards the end to brown.
The baked potatoes and mussels emit a remarkable and very inviting aroma.

I recommend serving with some good homemade sliced bread placed in the center of the table.
