Bread Meatless Patties in Air Fryer

Bread meatless patties are actually similar to those that my mom used to make for us every Sunday as a second course when I was a child. It was not always possible to cook meat ragù, and these egg-based meatless patties were more accessible. I still love them very much, and today, for the first time, I made them in the air fryer. They are lighter and very similar to classic ones fried in a pan with extra virgin olive oil. The mixture doesn’t change and is made the same way.

Ingredients

  • 7 oz bread (stale)
  • 2 eggs
  • 2 tbsps Grana Padano cheese grated
  • 1 clove garlic
  • to taste fine salt
  • to taste parsley (fresh)
  • to taste extra virgin olive oil

Steps

Cut a slice of stale bread of about seven ounces. Crumble the crumb while the crust can also be soaked in water for easy crumbling.

  • Beat the eggs in the bowl and add the bread.

  • Chop the garlic clove finely into the bowl. Add the chopped parsley, salt, and grated Grana cheese.

  • Mix everything until you get a compact, not liquid dough. If needed, you can add a bit more breadcrumb.

  • Place a sheet of baking paper on the grid of the air fryer and drop spoonfuls of the mixture spaced apart, then drizzle with a little bit of extra virgin olive oil on top.

  • Cook for ten minutes at 356°F for ten minutes. Open the fryer, turn the patties to the other side, and cook for another five minutes.

  • The bread patties without eggs in the air fryer will be nicely golden, soft, and tasty.

Tips:

Double the quantities for more people but do not cook more than six patties at a time.
