The fresh spearmint cucumber salad is exactly what you need right now with these heatwave temperatures, especially in southern Italy. Easy to prepare with just a few ingredients. If we feel tired and reluctant to cook, this is a good solution to pair perhaps with mozzarella as a side and some bread if you like, otherwise the important thing is to stay hydrated with this good salad.

- Preparation time: 10 Minutes
- Portions: 2 servings
- Cuisine: Italian
- Seasonality: Summer
Ingredients
- 2 cucumbers
- to taste mint
- to taste salt
- 2 tablespoons extra virgin olive oil
- to taste lemon (Juice)
Tools
- Bowl
- Knives
Steps
First, prepare the cucumbers. Remove the top and bottom. I’m not exactly sure if it helps, but our mothers would rub the cut part with the end of the cucumber to remove bitterness.
Wash the cucumbers under running water, cut them lengthwise into quarters, and then chop into pieces.
In a bowl, mix the oil with the salt and lemon juice (no more than half a teaspoon).
Add the mint and pour everything over the cucumber pieces in the bowl.
Finally, let it rest in the fridge for at least twenty minutes before serving the fresh spearmint cucumber salad.
