I had already eaten the poke we comfortably got delivered at home, and it was excellent, but this homemade one is just as good, believe me.

Ingredients
- 1 cup rice (short-grain or basmati)
- 10.5 oz chicken breast
- 3 tomatoes (medium)
- black olives (pitted as desired)
- 1 can corn, sweet, canned, drained
- as needed cashews
- 1 tsp cream cheese (Like Philadelphia)
- poke sauce (or yogurt sauce)
- as needed olive oil (to marinate the chicken)
- lemon juice (to marinate the chicken)

Steps

Cook the rice al dente for about fifteen minutes in a pot of boiling water with salt.
Meanwhile, place the chicken cut into cubes to marinate in oil and lemon for about fifteen minutes in a dish.
Cook in the air fryer at medium temperature for thirteen to fifteen minutes at 356°F.
Prepare the tomatoes in cubes after washing them, and if desired, pour a drizzle of olive oil over them.
Add rice as a base in the bowl and a bit on one side, the tomatoes, olives, corn, shelled peanuts, and chicken nuggets cooked in the air fryer, arranged as in the photo.
Place the soft cheese and yogurt sauce in the center of the table so everyone can serve at will.
The homemade rice and chicken nugget poke bowl is complete and can be served warm or cold. If possible, use Chinese chopsticks 🙂
