The good Thermomix Genovese pesto has its tricks and secrets for a great outcome. This recipe actually seems easy, and it is, but I assure you that, as my friend taught me, it is nothing like what you buy in various supermarkets. Certainly, there are some good varieties available, but in spring/summer when basil is abundant, preparing it at home doesn’t take much time and compensates.

Ingredients
- 3.5 oz basil (fresh)
- 3.5 oz almonds
- 2.8 oz grated Parmesan cheese
- 1/2 cup olive oil
- to taste fine salt
- 1 garlic

Steps
The first suggestion is to detach the basil leaves and wash them. Place the leaves in a strainer or better yet, spread them on a towel and let them dry. If you start in the morning, you can proceed with the pesto in the afternoon or evening.
Pour the leaves, almonds, salt to taste, grated Parmesan, and garlic clove into the Thermomix bowl. Activate the Thermomix and blend for about 3 minutes.
Now you can add the olive oil. Why add it at the end? Well, my expert friend advised me to do so because adding it together with the other ingredients makes the blades slippery, and the basil, almonds, etc., do not blend well. This way, you can obtain a homogeneous pesto. Worth a try.
However, this Genovese pesto is not original as you may have noticed; it lacks the Genovese basil, which I once had the chance to taste and is incomparable, much more fragrant than our Apulian one. We Apulians can only boast about our oregano 🙂
