Golden but not fried, they are really the best as a side dish. Here’s another way to enjoy beneficial eggplants with many anti-inflammatory, anti-tumor properties and they are also rich in fiber.

Ingredients
- 1 eggplant (large)
- 3 tablespoons breadcrumbs
- to taste chopped parsley
- 1 tablespoon grated Parmesan cheese
- to taste fine salt
- to taste oregano
- to taste extra virgin olive oil
Steps
Wash the eggplant and dry well with a cloth. Cut into slices of about 1/4 inch on a cutting board.
Pour breadcrumbs, Parmesan, parsley, salt, and oregano into the plate and prepare the breading.
Bread the eggplant slices one by one evenly and place them on the air fryer rack. Drizzle a little olive oil over them.
Cook the eggplants for about 15 minutes at 356°F. No need to turn them, and you’ll see they’ll have a nice golden appearance and be crispy just right.
Serve the light eggplant slices breaded without egg as a side dish to accompany meats, fish, or other dishes.
