Pasta with Arugula and Cherry Tomatoes from Puglia

Pasta with arugula and cherry tomatoes from Puglia is a classic of the region. I recently discovered that it’s even better with trofie, but if you prefer, you can also make it with penne, spaghetti, or fusilli.

Our Puglian arugula, I always say, is more bitter than the one you buy packaged in bags at supermarkets. It’s picked in the fields by a friend of ours who loves outdoor walks (where there aren’t many vehicles) and kindly given to us. Needless to say, we greatly appreciate this gesture.

The recipe for pasta with arugula and cherry tomatoes is easy and accessible to everyone, even those with little cooking experience.

  • 1 bunch arugula
  • 10 cherry tomatoes
  • 1 clove garlic
  • 2 blocks tomato sauce
  • 300 g pasta (Preferably trofie shape)

Procedure

  • Wash the fresh arugula, removing any imperfect leaves, and rinse two or three times in a bowl. Drain in a colander.

  • In a pan, place a halved garlic clove with four tablespoons of olive oil. Let it brown and add the chopped cherry tomatoes and two tablespoons of sauce.

  • Cook on low heat for about ten minutes. If needed, add half a glass of water.

  • Meanwhile, boil the pasta in boiling water along with the arugula. You can also add some chopped arugula at the end of cooking in the pan with the cherry tomatoes. I did it this way because my daughter prefers it raw.

  • Cook the pasta for about 12/13 minutes and drain. Season with the sautéed cherry tomatoes in the pan and remember to remove the garlic.

  • Finally, serve the pasta with arugula and cherry tomatoes from Puglia hot or warm. It’s a quite tasty and affordable recipe.
