Focaccia with Turmeric, Black Olives, and Cherry Tomatoes Super Soft

The focaccia with turmeric, black olives, and cherry tomatoes is super soft with boiled potatoes in the dough. Turmeric, my favorite spice, gives it a particular taste that is noticeable but blends well with the other ingredients in the recipe.
A focaccia that I discovered recently and threw myself into making something different. Similar to the Apulian focaccia, but I used powdered rosemary instead of oregano, which I think would also be fine. Maybe next time I’ll change.

FOCACCIA WITH TURMERIC BLACK OLIVES AND CHERRY TOMATOES
  • Cuisine: Italian

Ingredients

  • 6 cups all-purpose flour
  • 3 potatoes (medium)
  • 0.35 oz fresh brewer's yeast
  • 1.75 cups water (lukewarm)
  • 1 tsp fine salt
  • 3 tsps turmeric powder
  • to taste Grana Padano DOP (grated)
  • 10 cherry tomatoes
  • 2 cloves garlic
  • 1.75 oz black olives (pitted)
  • to taste rosemary
  • to taste extra virgin olive oil

Tools

  • Bowl Tupperware for pizza
  • Cake pan – non-stick (large)

Preparation

  • Place the flour in the bowl along with the salt, mashed potatoes, turmeric, and mix.

  • Then pour the water with the dissolved yeast a little at a time and work with your hands for about twenty minutes.

  • Cover the dough with a hermetically sealed lid and wait for it to double. It should rise for at least two hours.

  • Transfer the dough to a large oiled cake pan and spread it with your hands over the entire surface.

  • Let it rise for another thirty minutes and season with chopped cherry tomatoes, finely chopped garlic, cheese, and rosemary.

  • Finally, drizzle with olive oil and bake the focaccia in the hot oven at 482°F for about twenty-five to thirty minutes.

  • Let the focaccia with turmeric, black olives, and cherry tomatoes cool slightly, enjoy its intoxicating aroma of turmeric and rosemary. Serve at the table for an exciting dinner.

Tips for the focaccia with turmeric, black olives, and cherry tomatoes: If you don’t have a Tupperware bowl for pizza, you can use a large bowl, then cover the dough with a towel and place everything inside a large plastic bag. The dough will rise faster this way.

This advice, however, was suggested to me by my husband, who read it somewhere, and I assure you it works.

The old blanket-on-top method also works. Just like grandmothers used to do.
