Sweet and Salty Watermelon and Feta Salad: A Hydrating Summer Recipe

What could be better than watermelon in the summer to hydrate with a refreshing Sweet and Salty Watermelon and Feta Salad? This is my daughter’s favorite, which she discovered in Greece and has been making ever since on hot days. Greek feta cannot be compared with Italian feta. Indeed, my daughter always says the Greek one is much better, but when it’s unavailable, you can find it at supermarkets at a good price. Watermelon is excellent here in Italy as well, so the salad turns out just as good.
This recipe is also a great remedy when appetite is lost due to the summer heat. It stimulates eating, and feta cheese is also nutritious. It won’t weigh down digestion, so you can swim before.

Sweet and Salty Watermelon and Feta Salad

Ingredients

  • 10.5 oz watermelon
  • 7 oz feta
  • 1.75 oz black olives (pitted)
  • 1 red onion (large, preferably from Tropea)
  • to taste extra virgin olive oil
  • mint (fresh, two leaves)

Tools

  • Bowl (large)
  • Cutting board
  • Knife

Preparation

  • Cut the watermelon into pieces and place in the large bowl.

  • On the cutting board, using a knife, dice the feta cheese and then add it to the bowl.

  • Thinly slice the Tropea onion and mix well.

  • Dress with a drizzle of extra virgin olive oil and finally season with chopped mint leaves.

  • Do not add salt to the sweet and salty watermelon and feta salad as feta is salty enough on its own.
