A recipe I often cook because it’s easy to make and pleases all family members. When I prepare it, my husband always tells me to add a few more potatoes. 🙂 It’s enjoyed so much that it’s never enough.
In Puglia, we also have rosemary that grows wild along the Adriatic coast.
It’s a widely used and sought-after spice.
We use it to flavor potatoes but also for white meats, roasts, and even on fish.

Ingredients
- 25 oz Potatoes
- 1.1 lbs Chicken (Cut into pieces)
- 1 clove Garlic
- to taste Rosemary
- to taste Extra virgin olive oil
- to taste Grana Padano DOP

Preparation
Peel the potatoes, wash them, and cut them into large wedges. Place them in a baking dish and add the chicken pieces.
Add the halved garlic (to be removed after cooking), salt, preferably fresh rosemary, some grated Grana, and a drizzle of extra virgin olive oil on top.
Pour a glass of water on the edges of the baking dish so that the seasoning remains intact.
Bake at 536°F and cook for about one hour and fifteen minutes.
Open the oven occasionally during cooking to check if it dries out too much and add more water if necessary.
At the end of cooking, the potatoes and roasted chicken will have a golden and inviting appearance.
