Ingredients

  • 3 cups Lasagna
  • Sausage (4)
  • to taste Extra virgin olive oil
  • Eggplants (1)
  • Bell peppers (1 red)
  • 1 glass White wine

Preparation

  • In a saucepan with extra virgin olive oil, brown the sausages after removing the casing and crumbling them.

  • Then add the eggplant and celery cut into rather small cubes and the bell peppers into strips, and sauté together.
    Season furthermore with a little salt, a sprinkle of pepper, and pour in the white wine.

  • Let it evaporate and then cook over low heat, adding a ladle of water.
    In the meantime, boil the broken lasagna pieces in a large pot with boiling salted water for six to seven minutes.

  • Add a bit of oil to the water so they don’t stick.
    Drain and season with the sausage and vegetables.
