The snow ice cream known as “zurbett di neve” is an old tradition passed down by our parents just like the snowman, which turned our cold days into festive ones. The snow was the ice cream that came from the sky. It filled us with excitement, and we would stay enchanted watching from the door’s glass how lightly it fell and then gradually covered everything like a blanket. We couldn’t just watch it, and when we finally got permission to go outside, it was a celebration. My mom, who learned it from my grandmother, would come out, too, with a wide smile, a bowl, and a spoon. She would fill the bowl with fresh snow and then at home, she would prepare the much-awaited zurbett for us.

Ingredients
- 4 cups snow
- 3 tablespoons sugar
- 2 tablespoons coffee liqueur (optional)
- 2 tablespoons cocoa
Preparation
Pour the four cups of snow collected in places where it’s untouched and therefore clean into the bowl.
Add sugar, liqueur, and cocoa to the snow and mix well with the spoon.
Serve the snow ice cream zurbett in glasses, made in no time and eaten just as quickly.

The snow ice cream we called “Zurbett di neve” was so exciting. Watching the preparation was a big celebration for us kids. In the 1960s, we didn’t have many attractions, but it took little to make us happy. A bit of snow made us euphoric all day, and we didn’t even complain about the cold when we came home with frozen feet. Mom patiently dried the wet socks and gloves near the brazier, and once they were dry, we’d go out again to make the snowman together and throw snowballs at each other.
