The eggplant towers with ketchup with oven-grilled eggplants, a truly delicious side dish idea. With the aroma of oregano, which we use a lot in the south for pizzaiola dishes. Therefore, our oregano grows spontaneously along the Adriatic Sea coasts and has a remarkable scent that lasts long. It is collected in summer and then used throughout the year. First, the branches are dried, then passed through the fingers to obtain the leaves and flowers. This eggplant tower recipe is an idea for when you don’t have the necessary time to prepare the classic eggplant parmigiana, which is unsurpassable but requires more preparation time. As a variant, I would say that the eggplant towers with ketchup are an excellent substitute, and I invite you to try them.
