The focaccia with spinach and mozzarella is a really special focaccia that, in my opinion, ‘Popeye’ (famous cartoon character) would surely have appreciated. Who knows, maybe we don’t know, but maybe Olive prepared it for him sometimes!!! 🙂 From what I remember anyway from when I was a child watching the legendary cartoons, Popeye, when in trouble, would suddenly always manage to retrieve his can of spinach and then become suddenly strong.

Ingredients
- 4 cups All-purpose flour
- 1 tsp Fine salt
- 0.9 oz Fresh baker's yeast
- 2 Potatoes
- 10 oz Spinach
- 1 clove Garlic
- to taste Extra virgin olive oil
- 9 oz Mozzarella

Preparation
Peel the potatoes, cut into pieces, and cook for about 13/15 minutes. Drain and save some of the cooking liquid to dissolve the fresh yeast and let it cool.
Put the flour in the pizza container with the salt and the mashed boiled potatoes. Pour into the container 1.5 cups of the warm cooking liquid in which the yeast has been dissolved and knead for about fifteen minutes.
Then close the container and wait an hour and a half until the dough doubles. Then spread the dough with your hands onto an oiled cake pan.
Place the spinach leaves blanched in boiling water for just one minute on top and add chopped garlic and a drizzle of extra virgin olive oil.
Bake in the oven set to 536 °F with the cake pan placed in the center and cook for about 25/30 minutes. Also add plenty of mozzarella at the end of cooking, put it back in the oven, wait for it to melt, and here is the focaccia with spinach and mozzarella ready to be cheerfully shared with the family.
Finally, let it cool and serve the focaccia with spinach and mozzarella in pieces. Don’t forget the beer that pairs well with the focaccia, although some also prefer Coca-Cola as a drink.

Tip for the focaccia with spinach and mozzarella: Keep a little of the spinach cooking liquid to moisten the surface if you notice the vegetable drying out.
