Rice with Exquisite Fish Broth

  • 9 oz Red mullet
  • 9 oz Ope
  • Carrots (1)
  • Celery (1 piece)
  • Onions (1)
  • Tomatoes (2)

Preparation

  • In a pot with sufficient water, cook carrot, celery, tomatoes, and onion cut into large pieces. It’s preferable to leave the onion whole to remove it more easily.

  • Scale the fish with scissors and remove the innards. Wash thoroughly under running water.

  • Cook for thirty minutes from boiling over moderate heat. Lower the heat, add the fish, and turn off the stove after a maximum of 4/5 minutes.

  • Let the broth rest and reheat it before serving. Cook the rice al dente in another pot with plenty of salted water.

  • Drain the rice and serve it in dishes, adding the reheated broth. After setting the fish aside on a plate, pour through a strainer to ensure there are no bones. Enjoy hot and eat the good fish as a second course.
