Fluffy Scrambled Eggs with Cheese

Fluffy scrambled eggs with cheese are the right solution for a quick, impromptu second course or main dish. They can be cooked in the microwave, but they can also be done in a pan. When I sometimes find myself alone at home and I don’t feel like cooking just for myself (I don’t like eating alone but certainly don’t neglect myself), I either use up leftovers I find, or I prepare simple things. Since in my house eggs should never be missing in the fridge and I rarely run out, I skip the first course and have lunch by preparing eggs with processed cheese. In the cookbook that comes with my microwave, which teaches how to cook quickly and practically, I found this idea to make eggs fluffy.

fluffy scrambled eggs with cheese
  • Difficulty: Easy
  • Cost: Cheap
  • Preparation time: 2 Minutes
  • Portions: 1 person
  • Cuisine: Italian

Ingredients

  • 2 Eggs
  • Processed cheese slices (1)
  • to taste Extra virgin olive oil
  • to taste Black pepper (Ground)

Preparation

  • Pour a little extra virgin olive oil into a microwave-safe or pan-safe dish. Add the cheese slice and melt it by setting the microwave to medium power.

  • Break the egg and use a fork to remove only the egg white, mixing it with the melted cheese. If you prefer to mix it with the yolk as well, that’s fine, but I like the yolk whole.

  • Cook again for two more minutes or less, depending on how you prefer it, with the yolk more or less cooked.

  • A little more salt and a sprinkle of black pepper, and the second course with fluffy scrambled eggs with cheese is ready to be enjoyed.
