Preparation
Boil the eggs in a small saucepan covered with cold water, counting seven/eight minutes from boiling. Cool the hard-boiled eggs under running water and peel them.
Clean the fennel and wash under running water. Peel and wash the carrots. Slice the fennel into sticks and the carrots into thin rounds using the vegetable slicer in the food processor, then place in a salad bowl. Add the eggs sliced into rounds as well.
Combine the oil in a cup with salt, chives, black pepper, and lemon juice, and prepare a dressing by stirring with a fork.
Finally, mix with utensils and serve the egg, fennel, and carrot side dish. The nutritious side dish with eggs is a practical idea, also suitable for picnics, to be accompanied by good homemade bread.
