Ingredients
- 1 1/4 cups Digestive biscuits
- 1/2 cup Butter
- 1 1/2 cups Berry jam
- 1 cup Fresh whipping cream (For desserts)
- 9 oz Mascarpone
- 9 oz Plain natural yogurt
Preparation
Blend the biscuits in a food processor until they become flour-like and place them in a container. Melt the butter by heating in the microwave at medium temperature for one minute, and pour over the biscuits.
Mix with hands and place in a springform pan lined with parchment paper. Press the biscuits with the bottom of a glass to form a base.
Place in the freezer for half an hour. Whip the cream for the cream mixture and pour it into a large bowl. Add yogurt, mascarpone cheese, sugar, and mix gently with a wooden spoon.
Pour the obtained cream over the biscuit base. Spread the jam on top with a spoon and have fun using a stick to create swirls by mixing the cream.
Put the cake back in the freezer for another hour and serve it cold with a nice cup of coffee.
