Dark Chocolate Muffins without Butter for Breakfast

The delicious and fluffy muffins with dark chocolate, scented with vanilla aroma, are perfect for breakfast and also for a healthy and irresistible snack. They bring joy to young children as well as adults. They are convenient to pack in a bag for a work break. In today’s fast-paced life, sometimes there’s not even time for breakfast. These muffins are a quick solution to give the energy needed. We can also send them to preschool with our little kids, as an alternative to the usual packaged snack. Store-bought snacks often aren’t enough to satisfy a child’s hunger; at least two or even three are needed, and too many, as we know, aren’t good. These muffins, unlike others, do not contain butter or milk but only vegetable fats.

Ingredients

  • 1 3/4 cups All-purpose flour
  • 1 cup Sugar
  • 2 1/2 oz Dark chocolate
  • 1 packet Baking powder
  • 1 packet Vanillin
  • 3 Eggs
  • 1 Extra virgin olive oil
  • 1 Water
  • 1 pinch Fine salt

  • Muffin cup (16 muffin cups)
  • Muffin tin

Preparation

  • On a breadboard, chop the dark chocolate with a knife. Set aside some chocolate shavings to add on top of the muffins just before removing them from the oven.

  • Place the sifted flour, sugar, chocolate, baking powder, vanillin, eggs, oil, water, and a pinch of salt in the food processor bowl. Mix for 3 – 4 minutes.

  • Then pour the soft mixture into the muffin cups, filling them almost halfway, and place in the appropriate muffin tin. Bake in the preheated oven at 392°F for about twenty minutes.

  • Open the oven and sprinkle the set-aside dark chocolate shavings on each muffin. Wait for them to melt and remove from the oven.

  • Let the dark chocolate muffins cool before serving. The indicated amounts are enough for about twelve muffins.
