Dark Chocolate Fondant with Soft Center

Ingredients

  • 5.3 oz Dark chocolate
  • 1.4 tbsp Butter
  • 0.7 cup Powdered sugar
  • 2 Eggs (+ one yolk)
  • 0.2 cup Flour
  • 2 tsp Bitter cocoa powder
  • 1 pinch Fine salt

Preparation

  • Break the chocolate into pieces using a cutting board and a knife. Melt the chocolate in a saucepan, heated in a bain-marie. Add the butter and mix.

  • In a bowl, beat the eggs and sugar with a mixer until foamy, then add a pinch of salt, flour, and bitter cocoa. Pour the chocolate into the bowl and mix everything together.

  • Butter and dust with cocoa powder four aluminum molds. Fill with the mixture and bake in a preheated oven at 356°F for about 13 minutes.

  • Let the dark chocolate fondant with soft center cool slightly and turn them upside down on a plate. Add powdered sugar before serving and, with a spoon test, check if the dessert is cooked just right; otherwise, put the remaining ones back in the oven for a few more minutes.
