Stuffed Meatballs with Olives

The meatballs stuffed with olives are perfect as a main course and also to add to the buffet at parties and special occasions to enrich.
They are simple to prepare and can also be served skewered on a long stick to pick them up without getting greasy hands.

Ingredients

  • 10.5 oz Beef (Ground)
  • 1/2 cup Breadcrumbs
  • 1.75 oz Grana Padano Cheese
  • 1 Egg (+ one yolk)
  • to taste Fine Salt
  • to taste Rosemary (Powdered)
  • 2.5 oz Green Olives in Brine (Pitted)
  • 3 tablespoons Extra Virgin Olive Oil
  • 1 glass White Wine

Preparation

  • Beat the eggs in a plate and pour them into a large bowl. Add the breadcrumbs, grated Grana Padano cheese (keep a tablespoon aside to fill the olives), fine salt, powdered rosemary, and mix everything with a fork.

  • Then take small amounts of the mixture and form round meatballs in the palm of your hand. Make a hole in the center of each meatball. Fill with a small piece of cheese to fill the olive pit gap.

  • Put a little more mixture on top to close the meatballs. Fry the meatballs with the olive oil, turning them often, and then drizzle with white wine. Cook with lid on for about ten to fifteen minutes over medium heat. Decorate with rosemary sprigs.

  • Stuffed meatballs with olives are tasty to eat both hot and cold. They can also be prepared in advance and then reheated in the microwave a few minutes before serving.
