Those who know me know that I don’t particularly like to get involved, but this time I couldn’t resist and wanted to try it.
I must tell you that the result is truly amazing! They are prepared in no time and solve dinner with few ingredients, but above all, you can fill these eggplant sandwiches as you prefer. I chose stracchino cheese, arugula, cherry tomatoes, and smoked scamorza cheese, but you can also add ham if you like.
This recipe is a perfect blend of lightness and taste, but at the same time, a very simple alternative idea to bring to the table. Yes, unfortunately, you will have to turn on the oven, but you can also cook them in an air fryer. So, you have no excuses not to try it too! Ingredients
- 1 black oval eggplant
- 3.5 oz smoked scamorza cheese
- 1.5 tbsp extra virgin olive oil
- 0.7 oz grated Parmesan cheese
- 1 oz stracchino cheese
- 4.6 oz cherry tomatoes
- arugula (to taste)
- salt (to taste)

Steps
First, remove the stem from the eggplant and slice it thinly. Then place the slices on a baking tray lined with parchment paper, slightly overlapping them to form 5 rectangles as shown in the picture.
Season with salt, then drizzle with olive oil and sprinkle grated cheese on each rectangle. Separately, grate the smoked scamorza with a wide-hole grater and distribute it on top. Bake in a preheated oven at 356°F (180°C) with ventilation for 20 minutes, until the surface is golden.
In the meantime, clean the arugula and cherry tomatoes and slice the latter. Remove the toasts from the oven and let them cool. Then flip them and spread stracchino cheese on top. Add some arugula and a few sliced cherry tomatoes.
Close to form something of a sandwich or panino and serve.
