Today I offer you a grain salad with potatoes and green beans. It is a very appetizing dish, characterized by an enticing combination of ingredients. Potatoes and green beans combine perfectly with each other and with the mixed grains, while the toasted pumpkin seeds give the mix that crunchy touch that always works well. It can be prepared in advance, is very easy, and is perfect for everyday cooking. For its preparation, I used the 7-grain mix from I Pronti Pedon. They are steamed, 100% natural, contain no preservatives, and are practically ready to use. An excellent alternative to pasta and classic rice. Just heat them in a pan or microwave, season, and enjoy. What could be more practical?

Ingredients for the Grain Salad with Potatoes
- 1 package 7 grains (I Pronti Pedon package)
- 5.3 oz green beans
- 1 potato (approx. 7 oz)
- 2 tbsps pumpkin seeds
- 1.8 oz Genovese pesto
- to taste extra virgin olive oil
- to taste salt
- to taste black pepper

- 1 Skillet (small)
Preparation of the Grain Salad with Potatoes
Trim the green beans, rinse well under running water, and cut them into small pieces.
Peel the potato, wash it, and cut it into cubes.
Heat a small skillet very well, add the pumpkin seeds, and toast them for 2/3 minutes (you will hear them pop).
In a pan, heat a drizzle of oil, then add the green beans along with a couple of tablespoons of water and cook for 5 minutes over medium heat, stirring occasionally.
Then add the potatoes to the green beans, adding another tablespoon of water if necessary.
Cook the vegetables (it will take about another 10/12 minutes) stirring often (please… they should be tender but still crunchy at the end).
Season with a generous pinch of salt and a grind of black pepper, then add the 7 grains from I Pronti Pedon and let them absorb the flavors.
Finally, add the Genovese pesto and mix it in perfectly. Adjust the salt, if necessary.
Divide the grain salad with potatoes and green beans into individual plates, sprinkling with the toasted pumpkin seeds. It is excellent both warm and at room temperature. Enjoy! Paola
